Choosing who I wanted to celebrate was not an easy task. Though a few of my ReDux friends immediately came to mind, one blogger and RD rose to the top. It’s someone whose recipes I save often so that I can quickly find that recipe to make in the future.

Problem is, that future rarely comes, for various reasons – time, out of sight out of mind, going back to the old standby weekly recipes, etc. That’s why I love this month’s theme, because it forced me (in a good way!) to create one of those recipes I’ve been meaning to make that my fellow blogger friends have shared. And, now I am motivated to do that more often!

Many of Jessica’s recipes are this same way. Jessica posts recipes and content that’s down to earth, approachable, simple, fresh and inspiring. I’ve had this grilled avocado recipe pinned for awhile and had to choose between featuring it or her Watermelon Feta Skewers … the skewers took a back seat this time around, but think I’ll make them for the 4th.

Anyhow, I had never grilled avocados before and we’ll definitely be doing it again. The soft, creamy avocado pairs really nicely with the crisp fresh salsa that’s just slightly sweet from the corn. Make these as a fun side dish for dinner or have atop or beside a salad for lunch.

Because I didn’t have all the ingredients on hand (no tomato, cilantro or jalapeno), I made the following tweaks:

  • subbed salsa for fresh tomato
  • subbed 1 scallion for the red onion
  • skipped the cilantro ( I love cilantro and will definitely remember to pick it up to use next time)
  • I also grilled a few limes to serve with the avocados for a fun twist
