Hearty Kale, lentil and sausage soup

Do you have a New Year’s Eve or New Year’s Day tradition in your house? Are you ringing in the New Year with any good luck  foods? Black eyed peas, pomegranates, leafy greens, lentils and whole fish are thought to bring luck and prosperity. Good Luck Foods is this month’s Recipe ReDux theme, so you’re going to have lots of great recipes to choose from for your New Year’s menu to bring good fortune for the upcoming year.

Since New England will most definitely be frigid and snowy when we ring in 2014, we’ll be staying warm and lucky on New Year’s Day with this Hearty Kale, Lentil and Sausage Soup.

This soup combines three “lucky” foods: leafy greens (symbolizing the green of money and prosperity), lentils (representing wealth) and pork (symbolizing progress and moving forward). Plus this bowl of goodness is packed with protein (from the lentils and sausage), fiber (from the lentils and kale), antioxidants, vitamins and minerals.

Make Hearty Kale, Lentil and Sausage Soup for a New Year’s Day lunch or dinner – or anytime the weather brings a chill. It’s hearty, packed with flavor and perfect for “recovery” meal post a late-night out on NYE.

Here’s how to make it:

Hearty Kale, Sausage and Lentil Soup

Time: active time 30 minutes, cook time 2-3 hours

Serves: 8-10


  • ¾ lb fresh pork sausage (uncooked), removed from casing
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 4 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 8oz can tomato paste
  • 2 bunches kale, stem removed and torn into bite-sized pieces – we used 1 bunch purple, one bunch green
  • 1 16 oz package black lentils (or any color you have on hand), sorted and rinsed
  • 64 oz reduced sodium chicken broth (or half water, half broth)
  • 3 sprigs fresh rosemary
  • 1 teaspoon each dried sage, dried thyme and garlic powder


In a non-stick skillet over medium-high heat, add sausage until browned, stirring to crumble. Set sausage aside in a bowl lined with paper towel to soak up some of the fat. In the same skillet, sauté onion and carrot until the onion begins to caramelize. Add garlic and sauté for 1 more minutes. In a large stock pot add sausage, onion and carrot mixture, broth, water, tomatoes, tomato puree, kale, lentils and spices. Bring to a low boil, then turn heat down and simmer about 2 hours. Remove sprigs of rosemary before serving. Top with shaved Parmesan, if desired. Serve with crusty bread.
