BBQ Pulled Chicken Hummus Pizza. Pizza dough rolled thin, spread with hummus, then topped with BBQ pulled chicken and onions, shredded white cheddar and fresh cilantro. All drizzled with BBQ sauce. Served hot off the grill for THE perfect game day grub.
Pizza on the grill is one of our favorite Friday night dinners, year round. We roll it nice and thin so it gets really crispy on the grill. Most of the time Adrian makes the dough from scratch. If we’re in more of a time crunch or are feeling lazy, we’ll go with premade dough. Our last resort is a premade crust, but we rarely go there because they rarely taste fresh.
White pizza with Cabot cheddar and sautéed onions is a house fave for toppings. A few other standbys (all include the must-have sautéed onions):
• Ricotta + sautéed mushrooms + sautéed onions
• Sausage + sautéed mushrooms + sautéed red onion
• Frozen chicken tenders + sautéed onions
• BBQ pulled chicken / onions (made in the slow cooker) + hummus + cilantro + BBQ sauce
This BBQ Pulled Chicken Hummus Pizza is a new fave in our house. It is GOOD. Honestly, the thought never crossed my mind to spread hummus on a pizza crust. Yes on sandwiches, naan, crackers, tortillas, as a dip…just not pizza crust. But boy am I glad we did. It adds a garlicky and creamy goodness to the pizza that’s the perfect base for your favorite toppings.
Hummus is a staple in our fridge – because we love the taste and because it’s packed with healthy fats and protein. And, two heaping spoonfuls of hummus a day will easily fulfill your bean recommendation for the week. Two spoonfuls is easily met daily in our household.
This pie is perfect for your tailgates. You make the pulled chicken ahead of time, so on game day just roll out the crust and assemble the pie. Or to make things even easier go with the premade pie crust.
Roll the dough out thinly so the crust gets crunchy (if you like crisp thin crust … we do). That crunch pairs nicely with the creamy garlicky hummus, sweet and savory BBQ chicken and onions and fresh and herby cilantro.
Here’s how to make this tailgating pizza:
BBQ Pulled Chicken & Hummus Pizza
Time: 25 minutes (not including preparation of pulled chicken)
Ingredients for pizza:
• 2.5 lb pre-made pizza dough (or pre-made crust, if preferred)
• 1.5 cups BBQ pulled chicken and onions, warmed (recipe below – or use prepared pulled chicken)
• 8 oz white cheddar cheese, shredded
• 10 oz (1 container) Sabra Classic Hummus – the Official Dips Sponsor of the NFL.
• ½ cup cilantro, chopped
• BBQ sauce for drizzling
Ingredients for BBQ pulled chicken:
• 1.75 lb chicken breast
• 2 medium red onions, sliced
• ½ cup BBQ sauce
Directions for pizza:
Preheat grill to medium. Oil grill grates. Roll out pizza dough into desired thickness and shape. Place on grill and cook 5 minutes. Flip and cook an additional 5 minutes or until crust is cooked through. Remove from grill and carefully spread Sabra hummus on the dough, just as you would tomato sauce. Add pulled chicken with onions and cheese. Place back on the grill for an additional 5 minutes, or until cheese is melted. Remove from grill and top with cilantro. Drizzle with additional BBQ sauce, if desired. Slice and serve.
Directions for pulled chicken:
Add chicken breast, onions and BBQ sauce to the slow cooker on high. Cook for 3-4 hours, depending on thickness of chicken breasts. Reserve 1.5 cups for the pizza.
