Sweet summertime corn is here and ready to be grilled. I have to admit corn is not typically one of my favorite vegetables – BUT that changes when we throw it on the grill. Tonight we used a cilantro and lime EVOO on the corn. How good does this look? Smells even better.

Grilled corn with cilantro-lime EVOO
Remove silk from 4 ears of corn, keep the husks intact. Soak corn in the husks for about 20 minutes. Turn on the grill. Combine the following in a small dish: 1/4 cup EVOO (extra virgin olive oil), 1/4 tsp truffle salt, 1 tblsp crushed garlic, juice of 1 lime, 1/4 cup or more chopped cilantro (I adore cilantro, so the more the better) Remove corn from water. Pull down husks and brush each cob with marinade. Grill about 10 minutes, rotating every 2-3 minutes. Remove from grill and brush again with more marinade if desired. Mmmmmmm!
