Yield: Serves 2

Grilled Haddock Salad with Kiwi Lime Cilantro Salsa

Ingredients

  • • ¾ lb haddock fillets (or other white fish)
  • • 4 cups mixed salad greens
  • For marinade:
  • • 1 Zespri SunGold kiwi, peeled
  • • Juice of 1/2 a lime (you’ll use the other ½ in the salsa)
  • • 2 Tbsp extra virgin olive oil
  • • Salt
  • • Pepper
  • For salsa:
  • • 1 Zespri SunGold kiwi, peeled and diced
  • • 1 jalepeno pepper, seeded and finely chopped
  • • ¼ red onion, finely chopped
  • • ¼ cup cilantro, chopped
  • • Salt
  • • Pepper
  • • Juice of 1/2 a lime
  • • 2 Tbsp extra virgin olive oil

Instructions

  1. Make marinade by combining all ingredients in a blender (or food processor) and pulse until smooth.
  2. Place fish in a bowl and top with marinade. Set aside for 10 minutes.
  3. Meanwhile, combine salsa ingredients and set aside.
  4. Preheat grill to medium high.
  5. Remove fish from marinade, discard marinade, and place fish on a grill rack or a piece of tin foil and then onto the grill (haddock is a delicate fish and will fall apart on the grill, so use the rack or foil to prevent the fish from falling through the grill grates; adjust depending on type of fish you’re using, firmer fish can go directly onto the grill).
  6. Grill for 5 minutes then flip and grill an additional 5 minutes until opaque and the fish flakes easily (grilling time will vary, depending on thickness).
  7. Remove fish from grill.
  8. Place salad greens onto 2 plates and top with grilled haddock and salsa.
  9. Serve with whole grain dinner rolls.

  3. One serving (2 kiwifruit) of SunGold provides three times more vitamin C than an orange and as much potassium as a medium banana. SunGold is a good source of antioxidant vitamin E.

Do you know how to tell if a kiwi is ripe? Hold a kiwifruit in the palm of your hand and squeeze gently. It should yield to slight pressure when ripe. To speed up ripening, leave out at room temperature approximately 3-7 days to ripen. Speed up the ripening process by putting kiwifruit in a paper bag with bananas or apples. Once kiwifruit is ripe, it can be kept in the refrigerator for up to 2 weeks.
