You see, it’s been dreary, raining/sleeting/snowing, chilly and just plain miserable the past few weeks. And that’s just the weather. In the past month, our little guy has gone through two boughts of ear infections, one respiratary virus (RSV), one stomach virus and, most recently, the flu. The poor little thing. And his daddy and pregnant mommy have also been lucky enough to catch the stomach virus, sinus infections and just all around nasty colds. This is the worst winter (sickness wise) that I can remember.

Lucca is at the age where everything goes in his mouth, and he’s in daycare where they swap germs on the regular, which is why we’ve seen a new “illness” basically on a weekly basis. We are very lucky though, that we have an otherwise healthy little boy – and, thus far, thank goodness, I’ve had a healthy pregnancy. So, if this is the worst we have to deal with, we can manage.

After having the stomach bug last weekend and not eating much at all except Pepperidge Farm goldfish (Lucca has us hooked) and bananas, all I was craving was citrus and mango – lots of mango. I was eating frozen mango by the bowlful because it was juicy, sweet, refreshing and cheery.  And citrus, especially lemon, anything and everything sounded good. So, these tart and sweet Lemon Bar and Coconut Overnight Oats were born. And, they are even tastier than they look. And packed with immune supporting Vitamin C.

Here’s how to make these Lemon Bar and Coconut Overnight Oats:

Lemon Bar and Coconut Overnight Oats

Prep Time: 5 minutes

Yield: Serves 2


  • o 1 cup plain kefir
  • o 1 5.3 oz cups siggi’s coconut 2% skyr
  • o Juice and zest of half a lemon
  • o 1 Tbsp chia seeds
  • o ¼ cup regular cooking oats
  • o ¼ cup coconut, shredded and sweetened
  • For topping:
  • o 1 5.3 oz cups siggi’s coconut 2% skyr
  • o 2 Tbsp lemon curd (optional)
  • o 1 Tbsp coconut (optional)


  1. In a medium bowl, mix together kefir, 1 container siggi’s, lemon juice and zest, chia seeds, oats and coconut. Chill for at least 2 hours, preferably overnight.
  2. When ready to serve, spoon oats in mason jars.
  3. Top equally with remaining siggi’s, lemon curd and coconut.
  4. Serve.

    I’m so sorry your household has been filled with germs, and you’ve all been sick! I’m finally getting over a nasty cold, and before that, I feel like I’ve been sick a lot more than usual this winter. My son had RSV and pneumonia when he was 1 1/2-so scary when your little one gets so sick! Here’s to sunnier days ahead for you and your family.! These oats look AMAZING-I can’t wait to make them, sick, or not 🙂

      @Kirsten – it’s an Icelandic yogurt – you can find it in your dairy section! If they don’t carry it, request it from the store manager.

    What is kefir

      @Mary, kefir is a fermented milk drink – tastes much like yogurt but thinner. Tart and slightly bubbly. You can find it in the dairy section of your supermarket.
