This Lobster, Egg and Avocado Breakfast Sandwich layers sweet tender lobster meat, creamy avocado and a fresh, organic farm egg all atop a toasted whole grain baguette.
We love lobster everyway, but it really shines in the simplest of dishes. Like simply served with drawn butter, lightly buttered in a lobster roll, atop a green salad or in this simple yet elegant breakfast sandwich. Especially with a gorgeous fried egg with a runny yolk.
Yes, lobster can be a bit pricey. But if you’re going to splurge, what better a day to splurge than Valentine’s Day? And who better to splurge on than your love? In reality, you really only need one lobster (1.5 lbs to 1.75 lbs) to make these two sandwiches, but feel free to go overboard with more lobster meat if it’s in your budget. (We went overboard in making these sandwiches, as you can see from the picture above…!)
Also, to make it easy on yourself (if you prefer not to steam or grill lobsters yourself), order a steamed lobster from your grocer the night before you’re going to make these sandwiches. Pick out the lobster meat when you’re home from grocery shopping then chill until the morning when you’re ready to make these sandwiches.
The eggs we buy, use and love are Pete and Gerry’s Organic Eggs. They’ve been around since the late 1800’s, sourcing their eggs sustainably from small family farms. All of the Pete and Gerry’s Organic Eggs are produced without antibiotics, hormones, pesticides, GMOs or animal byproducts. Aside from these factors, that are very important to us, we love how the eggs taste. And look at those gorgeous golden yolks. Since we eat eggs every single day (Lucca loves them), we want to know where our eggs come from and want to feel good about how the hens are raised.
The buttery runny yolk on this sandwich goes perfectly with the lobster. But, you can take this sandwich to the next level, by drizzling some melted butter atop, which we did. We’ve also served this Lobster, Egg and Avocado Breakfast Sandwich on a croissant … which was amazing, but definitely more indulgent. But our favorite bakery is closed until March, so we went the baguette route.
Here’s how to make this best ever Lobster, Egg and Avocado Breakfast Sandwich. Happy Valentine’s Day!
- 1 3/4 lb lobster, cooked, meat pulled from shells
- ½ avocado, thinly sliced
- 2 fried eggs, cooked to desired doneness
- 1/2 of a whole grain baguette, divided in half or 2 whole grain rolls
- 1 Tbsp salted butter, melted
- Salt and pepper
- Toast baguette or rolls.
- Spray medium saute pan with cooking spray.
- Fry egg according to desired doneness.
- Layer baguette with avocado, lobster meat and egg.
- Drizzle with melted butter.
- Salt and pepper to taste.
Many grocers will steam lobsters for you onsite. When you arrive at your grocer, order the steamed lobsters, do your shopping, then pick up the cooked lobsters before checking out.
